Introducing the Rose collaboration with Brad… Chokeberry Yuzu Peppercorn – features the dark, tannic, superfood flavor of antioxidant-rich chokeberries. Sometimes referred to as Aronia berries, Brad grows them in his east-coast backyard. Pureed with aromatic green yuzu juice and zest from Pearson Ranch, and bolstered with Space Pepper, green peppercorn from Mill Pepper, they’re a balanced, citrus-scented Delight with a sparkly finish.
We think of this collaboration as a window into Brad’s mysterious mind’s eye. Swirling around in there is a catalog of exacting fermentation techniques, 100 different smoked fish recipes, and an earnest fascination for how things are made, from carpentry to kitchen gadgets to each element of our Delights.
The Rose crew flew to Brad’s kitchen and home studio in Connecticut to work on Chokeberry Yuzu Peppercorn, and showed him how they do Delights from start to finish, joining Brad in front for a mini episode of Makin’ It!: Rose edition. Rose sent a rosin press to The Coop (Brad’s Kitchen) to walk through the process of extraction using only heat, pressure, and Brad’s private stash of home-grown flower. We got an awesome yield, and because Brad is a gearhead in the kitchen and a pothead after hours (at all hours?), we left the heavy-duty @sasquash_rosinpress behind for him to play around with.
Once we had our extract, we set a big copper pot on the stove to cook down our chokeberry puree, which Brad flavored with punchy fresh yuzu and earthy green pepper. From there we turned the studio into a little candy factory, sending the mixture through a depositor into molds to cure before dusting them.
We made two batches – 2 MGs and a stronger 10 MG dose for a taste of Brad Leone’s home garden, in whatever potency that is best for you and yours.
